  • Six medium-large Granny Smith Apples
  • 2 cups instant oatmeal
  • 1 cup brown sugar (lighten it even more by using one-half cup brown sugar mixed with one-half cup Splenda for baking)
  • One-half cup raisins, any kind;
  • One-cup sugar-free or no sugar added apricot preserves;
  • Three teaspoons ground cinnamon;
  • One cup apple juice (no sugar added);
  • One lemon, squeezed

    Thinly slice the apples (but not too thin);

    Combine all ingredients in a large bowl;

    Pour into 9x12 inch baking dish, sprayed with cooking spray;

    Bake in pre-heated 350 degree oven for 45 minutes until golden brown; serve warm or room temperature with frozen vanilla yogurt (optional) or Non-Dairy Topping such as Cool Whip.
