Ingredients
- 1 cup Brown Sugar
- 2 Tablespoons Canola Oil
- 1/2 cups Honey
- 4 cups Quick Cook Oats
- 1- 1/2 cup Dried Fruit (I Use Raisins)
- 1- 1/2 cup Peanuts
- 1 teaspoon Cinnamon
- 1 dash Salt (if Peanuts Are Salted, Omit This!)
- 2 whole Eggs, Beaten
- 1 teaspoon Vanilla
Directions

1Preheat oven to 350F.

2Mix brown sugar, oil, and honey in a small bowl and microwave 15-20 seconds.

3This will help combine everything easily.

4Set aside.

5Combine oats, dried fruit, nuts, cinnamon and salt in a large bowl.

6Stir sugar mixture into oat mixture.

7Mix well.

8Add in eggs and vanilla and stir until well combined.

9Spray a large rimmed baking sheet (mine is 12x17 with edges on all 4 sides).

10Dump mixture onto baking sheet and spread evenly.

11Press mixture firmly.

12It should be compact and even.

13I use a sheet of parchment or wax paper to help with this step.

14Bake 17-20 minutes.

15Keep an eye on them towards the end.

16The edges should turn brown and the top should look golden.

17Remove from oven and allow to cool completely.

18Cut into 21 bars (3 rows and 7 columns).

19Put each bar into a snack-sized Ziploc baggie.

20I usually keep a weeks worth in the pantry at all times and the rest in the freezer.
