- 1 1/2 c. walnuts
- 1/2 c. dried apples
- 1/2 c. dried apricots or 1/2 c. dried peaches
- 6 c. quick oats
- 3/4 c. unsalted butter
- 1/2 c. honey
- 1/4 tsp. brown sugar
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 1/4 tsp. salt
Directions

1Place nuts, apples and apricots in a food processor; chop until fine.

2Transfer to large bowl and add oatmeal.

3In saucepan, combine butter, honey, sugar and cinnamon; bring to boil and stir for 1 minute.

4Stir into oatmeal mixture; add vanilla and salt. Press into a greased 10 x 15 x 1-inch jelly roll.

5Refrigerate, then cut into bar size.
