Ingredients

  • 1 1/2 c. walnuts
  • 1/2 c. dried apples
  • 1/2 c. dried apricots or 1/2 c. dried peaches
  • 6 c. quick oats
  • 3/4 c. unsalted butter
  • 1/2 c. honey
  • 1/4 tsp. brown sugar
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/4 tsp. salt

Directions

    Place nuts, apples and apricots in a food processor; chop until fine.

    Transfer to large bowl and add oatmeal.

    In saucepan, combine butter, honey, sugar and cinnamon; bring to boil and stir for 1 minute.

    Stir into oatmeal mixture; add vanilla and salt. Press into a greased 10 x 15 x 1-inch jelly roll.

    Refrigerate, then cut into bar size.
