- 4 oz. margarine or butter
- 12 oz. castor sugar (very fine granulated sugar)
- 1 egg, beaten
- 9 oz. self-rising flour
- 1 level tsp. ginger
Directions

1Whisk butter and sugar together in a bowl until pale and fluffy.

2Gradually beating the egg, sift the flour and ginger into the mixture and work in with a fork until fairly firm dough is obtained.

3Roll dough into small balls, about size of walnut, and put them on buttered baking sheets, spaced apart.

4Bake in the oven at 150° Centigrade, 300° Fahrenheit or gas mark 2 for 40 to 45 minutes, until crisp, well risen, hollow and very lightly browned.
