  • 1 box lemon Jell-O
  • 1 c. sugar
  • 1 3/4 c. boiling water
  • 3 Tbsp. cornstarch
  • 1/4 c. cold water
  • pie shell
  • 4 oz. cream cheese, softened
  • 3 to 4 grapefruit

Directions

    Dissolve Jell-O and sugar in boiling water.

    Add cornstarch dissolved in cool water to Jell-O mixture.

    Cook until clear. Cool.

    Peel and section grapefruit and cut into small pieces. Line pie shell with cream cheese.

    Add Jell-O filling and top with whipped cream.
