Grapefruit Salad

Ingredients

  • 2 envelopes gelatin
  • 1 c. water, divided
  • 1/2 c. sugar
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1 (20 oz.) can crushed pineapple (undrained)
  • 1 (16 oz.) can grapefruit sections (undrained)
  • 1/4 tsp. salt

Directions

    Soften gelatin in 1/2 cup cold water.

    Bring remaining 1/2 cup water to boiling.

    Add gelatin mixture, stirring until dissolved. Cream sugar and cream cheese together in a large bowl; add gelatin mixture, pineapple, grapefruit sections and salt.

    Mix well.

    Pour into 6 cup oiled mold; chill until firm.

    Serve on lettuce leaves.
