- 3 medium baking potatoes, scrubbed
- 1/4 c. chopped onion
- 2 Tbsp. butter
- 2 Tbsp. oil
- 1/4 tsp. salt
- black pepper to taste
Directions

1Grate potatoes, skin and all, on a medium grater.

2Add onion. Melt butter and oil in skillet.

3When hot, spread the potatoes to a depth of about 1/4-inch.

4Cover and cook over medium-low heat until the bottom is crisp and brown.

5Flip over and brown on other side.

6Season with salt and pepper.

7Cut into quarters and serve.
