Gravlax Salad

  • 1 None ripe avocado, peeled and stone removed
  • 2 tbsp lemon juice
  • 200 g mixed baby leaf salad
  • 400 g gravad lax (dill marinated salmon) cubed or thinly sliced
  • 4 tbsp olive oil
  • 3 tbsp white wine vinegar
  • 1/4 tsp sugar
  • 1 small onion, peeled and very finely chopped

Directions

    Sprinkle the avocado slices with lemon juice. Arrange on four small plates with the baby salad greens and gravlax.

    Whisk the oil, vinegar, sugar and onion and season to taste. Drizzle over the salads and serve immediately.
