  • 2 lb. fresh fish of choice, whole, cleaned or filleted
  • 1 lemon or lime
  • 1 onion
  • 1 large tomato
  • salt and pepper
  • 2 Tbsp. snipped parsley
  • 2 Tbsp. olive oil, oleo or butter

Directions

    Arrange fish in 12 x 7 1/2 x 2-inch baking dish; turn under thin edges.

    Salt and pepper as desired.

    Slice thin the lemon or lime and onion.

    Place citrus slices over fish.

    Separate onion into rings and place over fish-citrus.
