Great Potato Salad

Ingredients

  • 5 lb. unpared, cleaned potatoes cooked in boiling water (If using red potatoes leave on skin)
  • 1 1/2 tsp. salt
  • 1 tsp. dry mustard
  • 1/8 tsp. pepper
  • 1/8 tsp. cayenne pepper
  • 1/2 c. cider vinegar
  • 1/2 c. salad oil
  • 1 c. mayonnaise
  • 1/2 c. chopped green onion
  • 4-6 hard boiled eggs

Directions

    After cooking, peel potatoes and cube into small pieces while still warm.

    If red potatoes, leave skin on.

    Mix together the next 6 ingredients and pour over the warm potatoes.

    Refrigerate for several hours or overnight.

    When ready to serve, add the mayonnaise, onions and eggs.
