  • 3 c. flour
  • 1 1/2 c. sugar
  • 5 eggs
  • juice of 1 orange
  • 2 tsp. pure vanilla extract
  • 2 tsp. baking powder
  • 1 c. canola oil
  • 4 apples, sliced
  • 2 Tbsp. sugar
  • 2 tsp. cinnamon

Directions

    Cream together eggs and 1 1/2 cups sugar well. Add flour, baking powder and oil. Mix thoroughly. Add juice of 1 orange and vanilla. Pare, core and slice 4 apples. Mix with cinnamon and 1 tablespoon sugar. Pour egg batter into round (9-inch) cake pan and spread half of apple mixture over batter. Spread rest of batter over apple mixture and bake cake at 325° for 1 1/2 hours.
