Greek Cabbage Soup

  • 1 c. chopped onion
  • 3 Tbsp. olive oil
  • 2 qt. water
  • 1 lb. tomatoes, peeled and chopped
  • 2 lb. cabbage, shredded
  • 2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 2 Tbsp. minced parsley
