Greek Cornbread Casserole

  • 4 eggs, beaten with fork
  • 1/2 tsp. salt
  • 1 (8 1/2 oz.) pkg. Jiffy cornbread mix
  • 1 chopped onion
  • 6 oz. small curd cottage cheese
  • 1 stick oleo, melted
  • 1 (10 oz.) box chopped broccoli, cooked and well-drained
  • grated Cheddar cheese
  • bread crumbs

Directions

    Mix all together and bake in 400° oven for 30 minutes or until golden brown.

    Bake in 9 x 13-inch greased baking dish. Toss Cheddar cheese, grated and some bread crumbs together. Sprinkle over casserole and bake an additional 5 to 7 minutes until cheese melts.
