- 1 cup chicken broth or 1 cup vegetable broth
- 3 eggs
- 1/4 cup lemon juice, freshly squeezed
- 1/4 teaspoon salt (or to taste) (optional)
- 1/4 teaspoon pepper (or to taste) (optional)
Directions

1Bring broth to simmer in nonstick saucepan, lower heat and keep warm.

2Beat eggs with electric mixer until mixed.

3Blend half of warm broth into eggs in electric mixing bowl.

4Pour egg mixture into rest of warm broth in saucepan; heat over low heat, stirring constantly, until mixture coats back of spoon (do not boil).

5Season with salt and pepper (optional).

6Serve immediately.
