  • 8 c. milk
  • 1 c. rice
  • 1 1/2 c. sugar
  • 1 lemon rind, grated (optional)
  • cinnamon
  • 2 egg yolks, mixed with a little milk
  • 1 tsp. cornstarch, mixed into yolk mixture

Directions

    Put milk on to boil.

    Wash rice and add to the milk.
  3. 3
    When it comes to a boil again, reduce heat and simmer for about a half hour, stirring occasionally.

    Add sugar, lemon rind and egg yolk mixture.

    Simmer a few minutes longer.

    Serve on dessert plates, when cold.
  7. 7
    Sprinkle with cinnamon.
