Ingredients

  • 2 cups Cucumber
  • 1/2 cups Roma Or Plum Tomato, Seeded And Chopped
  • 1/4 cups Chopped Red Onion
  • 1/2 cups Chopped Celery
  • 1/2 cups Chopped Red Bell Pepper
  • 1 cup Feta Cheese
  • 6 Tablespoons Extra Virgin Olive Oil
  • 3 Tablespoons Fresh Lemon Juice
  • 1 teaspoon Dried Oregano
  • 1 dash Each Of Salt And Pepper

Directions

    Step 1: Cut the cucumber down the middle, lengthwise. Cut each half into two. Chop cucumber, roughly the same size as the other vegetables.

    Step 2: Add the cucumber, tomato, red onion, celery, red pepper and feta into a large bowl. Mix.

    Step 3: To make the vinaigrette, in a jar with a lid, add the olive oil, lemon juice and oregano. Season with salt and pepper. Shake before pouring onto the salad.

    Step 4: Mix the dressing and the salad together. Serve.
