Greek Spinach-Cheese Pie

Ingredients
- 2 lb. fresh spinach
- 1/2 c. minced white onion
- 1 Tbsp. olive oil
- 1 1/2 Tbsp. chopped dill
- 2 dashes of nutmeg
- salt and pepper to taste
- 1 c. cottage or Ricotta cheese
- 1/3 lb. crumbled Feta cheese
- 2 eggs, beaten
- 1 1/2 c. wheat germ
- 1 1/2 Tbsp. melted butter
- 1 small onion, chopped
Directions

1Chop spinach.

2Saute minced onion in olive oil until transparent.

3Add spinach; cover and cook until most of moisture evaporates.

4Remove from heat; add dill, nutmeg, salt, pepper, cottage cheese, Feta cheese, chopped onion and eggs.

5Mix well. Combine wheat germ and melted butter.

6Press into bottom and sides of large, flat baking dish.

7Pour cheese-spinach mixture into dish, spreading evenly.

8Bake in preheated 350° oven for 45 minutes or until crisp and brown.

9Slice to serve.
