- 1 teaspoon olive oil
- 2 12 cups chopped onions
- 3 minced garlic cloves
- 1 teaspoon dried oregano
- 6 cups water
- 1 teaspoon salt
- 2 cups chopped fresh tomatoes
- 4 cups peeled and cubed potatoes
- 1 lb green beans (frozen is fine, just add towards the end of cooking)
- 14 cup chopped fresh parsley
- 12 cup crumbled feta cheese
- 2 lemons, cut in wedges
- black pepper
Directions

1Heat oil and saute onions and garlic.

2Add oregano, water, salt, tomatoes, potatoes and green beans.

3Cover and simmer for 20 minutes.

4Just before serving, add the parsley.

5Pass lemon wedges and feta cheese.

6To add to individual bowls.
