  • 3/4 lb. carrots (4)
  • 3 leeks
  • 1/2 lb. mushrooms
  • 1/2 lb. zucchini (2)
  • 1/4 c. fresh parsley, chopped
  • 2 c. water
  • 1/2 c. white wine
  • 1/4 c. lemon juice
  • 1/4 c. olive oil
  • 2 green onions, chopped
  • 3/4 tsp. salt
  • 6 black peppercorns
  • 1/2 tsp. thyme
  • 3 sprigs parsley
