- 1 1/2 c. cooked green beans (fresh or frozen)
- 2 Tbsp. butter
- 1/2 c. finely chopped onion
- 3 to 4 oz. mushrooms, chopped
- 2 hard-boiled eggs, chopped
- 1/2 c. chopped walnuts
- salt and pepper
Directions

1Drain and puree beans in blender.

2Saute onion in butter until tender; add to beans in blender.

3Add chopped mushrooms and eggs. Add walnuts.

4Blend a few seconds more to mix thoroughly.

5Season with salt and pepper to taste.

6Mix well.

7Cover and chill at least 2 hours.

8Serve with crackers or dark bread.
