  • 2 cups Fresh Green Beans, Stems Removed (or More As Desired)
  • 1 Carrot, Peeled And Cut Into Thin Rounds (or Up To Double This Amount)
  • 1 Bell Pepper, Stem And Seeds Removed, Cut In Chunks (optional)
  • Salt And Pepper, to taste

    Heat the olive oil in a large saute pan then add the garlic and cook for a minute until aromatic. Add the rest of the vegetables and saute on high until soft but still crunchy (about 10 minutes). Season with the salt and pepper and a bit more olive oil if desired. Serve immediately.
