- 1 12-2 lbs green beans, ends trimmed
- 14 cup olive oil
- 3 -4 whole garlic cloves
- 3 -4 anchovy fillets, chopped
- 12 cup green olives, pitted and halved
- 13-12 cup pimientos or 13-12 cup roasted red pepper, strips
- 12 teaspoon crushed red pepper flakes
- salt
Directions

1Blanch green beans in very salty water until crisp-tender.

2Drain and transfer to an ice bath to cool briefly.

3In a large skillet heat olive oil until hot.

4Add the garlic cloves and the anchovy fillets and saute briefly.

5Add green olives and pimientos and saute for 2 to 3 minutes.

6Add the green beans, crushed red pepper and salt, to taste.

7Continue to saute until green beans are hot and the flavors have come together, about 4 to 6 minutes.

8Serve hot.
