- 2 lbs. long green beans
- Salt
- Juice of 1/2 lemon
- 1 lg. onion, quartered
- 1 lg. tomato, quartered
- 1/2 c. extra virgin olive oil
- 2 c. water
- 1 tbsp. sugar
- Pepper
- Sage and mint (a healthy pinch of each)
- Lettuce
- Hard boiled egg
- Black olives
Directions

1Wash, trim and break the beans in half.

2Toss them in salt and lemon juice.

3Stack like a wood pile in the bottom of a covered pot, leaving a well into that you put the onion and tomato.

4Pour in the extra virgin olive oil and water.

5Add in sugar and seasonings.

6Cover and cook till tender and water is absorbed.

7Cold in pot.

8Serve on lettuce.
