Ingredients

  • 2 lbs. long green beans
  • Salt
  • Juice of 1/2 lemon
  • 1 lg. onion, quartered
  • 1 lg. tomato, quartered
  • 1/2 c. extra virgin olive oil
  • 2 c. water
  • 1 tbsp. sugar
  • Pepper
  • Sage and mint (a healthy pinch of each)
  • Lettuce
  • Hard boiled egg
  • Black olives

Directions

    Wash, trim and break the beans in half.

    Toss them in salt and lemon juice.

    Stack like a wood pile in the bottom of a covered pot, leaving a well into that you put the onion and tomato.

    Pour in the extra virgin olive oil and water.

    Add in sugar and seasonings.
  6. 6
    Cover and cook till tender and water is absorbed.

    Cold in pot.

    Serve on lettuce.
