Green Beans Salad

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp Dijon mustard
  • 1 tsp chopped garlic
  • 1 tsp chopped fresh thyme leaves
  • 1/2 lb green and / or yellow beans
  • 3/4 cup small halved grape tomatoes
  • 1 None small yellow pepper, diced
  • None None curly leaf lettuce, for garnish

Directions

    In a large bowl, whisk together olive oil, vinegar, mustard, garlic and thyme. Season with salt and black pepper, if desired.

    Place beans and 3 tablespoons of water in a microwave-safe bowl. Cover and cook on high for 3-4 mins or until tender. Rinse in cold water. Alternative cooking method: in a pot over high heat, boil enough salted water to cover the beans. Cook beans for 3-4 mins or until tender. Rinse in cold water. Toss beans, tomatoes and pepper together with vinaigrette.

    In a bowl combine the beans, tomatoes, pepper and lettuce and mix with dressing.
