Green Beans With Cashews

- 3 lb. fresh green beans
- salt to taste
- 1/4 lb. (1 stick) butter or margarine
- 2 tsp. lemon juice
- 1 c. salted cashews
- salt and pepper
Directions

1Trim ends off beans.

2Bring a large pot of salted water to a boil.

3Add beans.

4Bring water back to a boil and slowly boil the beans, uncovered, for 8 to 12 minutes or until tender but still crunchy and firm.

5Immediately pour into colander and run under cold water for 3 to 4 minutes.

6Remove to paper towels and dry. (May be refrigerated covered overnight.)

7Before serving, bring to room temperature.

8Melt butter or margarine in a large skillet or wok.

9Add beans, lemon juice and cashews.

10Cook over moderately high heat, stirring and tossing gently until heated through. Season to taste with salt and pepper.

11Serves 10.
