Green Chile Chicken Soup

  • 3 Q water
  • 2.5 tsp salt
  • 3 lg chicken breast on the bone (skinned)
  • 1 can of corn (drained)
  • 3 ladle-fulls of green chile sauce
  • 2 rounded tsp corn starch (dissolved in cold water)

Directions

    Add salt to water and bring to a boil. Add chicken & boil gently for 2 hours. Remove chicken, cool quickly with cold water. Remove meat from bone and shred into medium pieces. Strain broth to remove sediment.

    Add shredded chicken, corn & green chile to broth. Bring back to a boil & add dissolved corn starch solution.

    Lower heat & simmer for at least one hour.
