Ingredients

  • 1 lb boneless pork sirloin, cut into cubes
  • 1 onion, diced
  • 1 garlic clove, minced
  • 2 cups diced hatch green chilies (can be bought canned)
  • 24 ounces diced tomatoes and green chilies
  • 1 tablespoon vegetable oil
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • 2 tablespoons flour
  • 4 -6 cups chicken stock

    brown pork in oil.

    add onions until soft then add garlic and saute for 1-2 min.

    sprinkle flour and cook 1-2 mins stirring constantly.

    add chilies, canned tomatoes, chicken stock, salt and pepper.

    bring to boil, reduce heat and simmer 1 1/2 to 2 hr stirring occasionally until pork is tender.

    Chili can be thickened if needed by adding a mixture of cornstarch and water.
