Green Chili Corn Cakes

- 3/4 c. corn meal
- 4 tsp. sugar
- 1/2 tsp. salt
- 1 egg
- 1 Tbsp. salad oil
- 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 c. milk
- 1 (4 oz.) can chopped green chilies, drained
Directions

1About 15 minutes before serving:

2In a medium bowl, mix the corn meal, flour, sugar, baking powder and salt.

3With fork, stir in milk, egg and green chilies, just until mixture is moistened. (Batter will be slightly lumpy.)

4In a 10-inch skillet over medium heat, add 1 tablespoon salad oil until hot.

5Pour batter into skillet by scant 1/4 cupfuls, making a few corn cakes at a time. Cook until lightly browned on both sides.

6Repeat, adding more oil if needed.

7Makes 12 corn cakes, 9 calories each.
