Green Chili Squash Casserole

  • 2 lb. yellow squash, cut up
  • 1 medium onion, chopped
  • 4 or 5 Tbsp. oleo
  • salt to taste
  • pepper to taste
  • 1 can condensed cream of chicken soup
  • 2 eggs, slightly beaten
  • 1 small jar jalapeno Cheez Whiz
  • 1 (4 oz.) can green chilies, drained and cut into thin strips
  • seasoned stuffing mix

Directions

    Steam in covered skillet the squash, onion, oleo and seasonings. Add chicken soup and eggs. Spread jalapeno Cheez Whiz in 2-quart rectangular glass casserole.

    Put squash mixture on cheese and spread chilies over evenly and top with stuffing mix. Bake at 350° for 30 minutes.
