  • 1 bunch spinach
  • 1 bunch coriander
  • 1/4 cup vinegar
  • 2 cloves garlic
  • 1 teaspoon oregano
  • 2 bay leaves dried
  • 2 cloves
  • 3 teaspoons salt

  • 1 teaspoon coriander seeds
  • 2 serrano chilies seeded and deveined
  • 1/2 cup water
  • 1 tablespoon pumpkin seeds
  • 1/4 onion chopped
  • 500 grams pork meat ground
  • vegetable oil
  • tortillas

Directions

    Using a food processor or blender, puree the spinach, coriander, vinegar, garlic, oregano, bay leaf, cloves, salt, a pinch of cumin, coriander seeds, Serrano chilies, water, pumpkin seeds, and onion until smooth.

    Add this mixture to the meat and mix using your hands.

    In a saucepan, add vegetable oil and fry until the meat is cooked.

    Serve in tortillas as chorizo tacos.
