Green Curry Fried Rice

  • 1 tbsp vegetable or peanut oil
  • 4 slices bacon, chopped
  • 7 oz broccoli, cut into small florets
  • 14 oz pumpkin or butternut squash, peeled and finely chopped
  • 3/4 cup canned or frozen corn kernels
  • 1 tbsp store-bought green curry paste
  • 4 cups cooked rice, cold
  • 3 None green onions, chopped
  • None None Lemon wedges, to serve

Directions

    Heat the oil in a wok or large skillet on medium-high heat. Add the bacon, broccoli, pumpkin and corn; stir-fry for 4-5 mins or until the vegetables have softened.

    Add the curry paste and stir-fry for 1 min or until fragrant. Add the rice and toss to combine. Season.

    Spoon the rice into serving bowls. Top with green onion. Serve with lemon wedges.
