Green Curry Fried Rice

Ingredients
- 1 tbsp vegetable or peanut oil
- 4 slices bacon, chopped
- 7 oz broccoli, cut into small florets
- 14 oz pumpkin or butternut squash, peeled and finely chopped
- 3/4 cup canned or frozen corn kernels
- 1 tbsp store-bought green curry paste
- 4 cups cooked rice, cold
- 3 None green onions, chopped
- None None Lemon wedges, to serve
Directions

1Heat the oil in a wok or large skillet on medium-high heat. Add the bacon, broccoli, pumpkin and corn; stir-fry for 4-5 mins or until the vegetables have softened.

2Add the curry paste and stir-fry for 1 min or until fragrant. Add the rice and toss to combine. Season.

3Spoon the rice into serving bowls. Top with green onion. Serve with lemon wedges.
