  • 1 Tbsp. salad oil
  • 1 small onion, chopped fine
  • 1 lb. lean ground beef
  • 1 (10 oz.) can green enchilada sauce
  • 1 (4 oz.) can chopped green chilies
  • 1 can cream of chicken soup
  • 12 corn tortillas, torn into bite size pieces
  • 1 c. grated Cheddar cheese

    Preheat the oven to 350°.

    Heat oil in a heavy skillet.

    Add onion and ground beef.

    Stir with fork to break up the ground beef and brown.

    Add chilies, soup and enchilada sauce.
