- 1/2 c. oil
- 12 corn tortillas
- 1 onion, chopped
- 8 oz. pkg. Monterey Jack cheese, divided
- 1/2 stick butter
- 2 Tbsp. flour
- 2 c. chicken broth
- 8 oz. sour cream
- 1 or 2 canned jalapeno peppers, chopped
Directions

1Fry tortillas in oil for about 5 seconds (they should be soft).

2Roll up tortillas with 1 teaspoon of onions and cheese in the inside.

3Place tortillas in a well-greased glass baking dish. Melt butter; add flour until thick.

4Add chicken broth.

5Cook over medium heat until thick but pourable.

6Add sour cream and peppers.

7Pour mixture over enchiladas.

8Add remainder of cheese on top.

9Bake at 350° for 20 to 25 minutes.
