- 1 whole Avocado
- 1 whole Anchovy
- 1 clove Garlic
- 3 Tablespoons White Wine Vinegar
- 1 teaspoon Lemon Juice
- 1/2 teaspoons Lime Juice
- 1/4 teaspoons Sugar
- 3/4 cups Olive Oil
- 1/4 cups Heavy Whipping Cream
- 3 Tablespoons Italian Parsley
- 2 Tablespoons Tarragon
- 2 Tablespoons Cilantro
- 1 Tablespoon Basil
- 1 whole Shallot
- Salt And Pepper
Directions

1Blend the avocado, anchovy, garlic, vinegar, lemon juice, lime juice, and sugar in a processor until a coarse puree forms. With the machine running, gradually add oil through the feed tube; blend well. Transfer the mixture to a bowl; whisk in cream. Add parsley, tarragon, cilantro, basil, and shallot; whisk to combine. Season dressing to taste with salt and pepper. Cover and chill at least 3 hours (dressing will separate if not chilled). Let stand at room temperature 20 minutes and rewhisk before serving.
