  • 1 whole Anchovy
  • 1 clove Garlic
  • 3 Tablespoons White Wine Vinegar
  • 1 teaspoon Lemon Juice
  • 1/2 teaspoons Lime Juice
  • 1/4 teaspoons Sugar
  • 3/4 cups Olive Oil
  • 1/4 cups Heavy Whipping Cream
  • 3 Tablespoons Italian Parsley
  • 2 Tablespoons Tarragon
  • 2 Tablespoons Cilantro
  • 1 Tablespoon Basil
  • 1 whole Shallot
  • Salt And Pepper

    Blend the avocado, anchovy, garlic, vinegar, lemon juice, lime juice, and sugar in a processor until a coarse puree forms. With the machine running, gradually add oil through the feed tube; blend well. Transfer the mixture to a bowl; whisk in cream. Add parsley, tarragon, cilantro, basil, and shallot; whisk to combine. Season dressing to taste with salt and pepper. Cover and chill at least 3 hours (dressing will separate if not chilled). Let stand at room temperature 20 minutes and rewhisk before serving.
