- 2 tablespoons butter
- 3/4 cup cornmeal
- 1/2 cup flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 6 eggs, separated
- 1 1/2 cups milk
- 1/4 cup melted butter
- 1 cup finely diced green onions (scallions)
Directions

1Preheat oven to 375 degrees.

2Prepare a 3 quart souffle dish by brushing with 2 tablespoons butter.

3Combine dry ingredients in a bowl.

4In a separate bowl, combine egg yolks, milk and butter and pour into dry ingredients.

5Stir to combine but do not over mix.

6Fold in the chopped scallions.

7Beat the egg white to firm peaks in a stainless steel bowl using a whip.

8Fold the beaten whites into the cornmeal mix and pour the batter into buttered dish.

9Place in the oven and bake for 1 hour.
