- 6 large green peppers
- 1 1/2 c. vinegar, divided
- 1 tsp. crushed red pepper
- 6 c. sugar
- 1/2 tsp. salt
- 2 (3 oz.) pkg. liquid pectin
Directions

1Seed peppers and chop coarsely.

2Place 1/2 pepper and 3/4 cup vinegar in food processor on high until smooth.

3Repeat with rest of peppers and vinegar.

4Combine pureed peppers, red pepper, sugar and salt in large Dutch oven; bring to a boil.

5Add pectin.

6Cook, stirring often, for 30 minutes or until mixture sheets from a metal spoon.

7Quickly pour into sterilized jars with 1/2-inch headspace.

8Cover at once with 1/8-inch paraffin.

9Cover with metal lids.
