  • 1 c. rice (2 c. cooked)
  • 2 eggs
  • 1 large can diced green chilies (Ortega)
  • 1 small grated onion
  • 1/2 tsp. garlic powder
  • salt to taste
  • 2/3 c. oil
  • 1/2 lb. shredded Cheddar cheese
  • dash of cayenne pepper
  • diced parsley
  • 1 can evaporated milk

Directions

    Cook rice as directed.

    In large mixing bowl, beat eggs; add oil and mix well.

    Add all other ingredients; mix well.

    Add rice last.

    Bake, uncovered, at 350° in a greased 9 x 13-inch loaf pan for 50 minutes.
