- 1 c. rice (2 c. cooked)
- 2 eggs
- 1 large can diced green chilies (Ortega)
- 1 small grated onion
- 1/2 tsp. garlic powder
- salt to taste
- 2/3 c. oil
- 1/2 lb. shredded Cheddar cheese
- dash of cayenne pepper
- diced parsley
- 1 can evaporated milk
Directions

1Cook rice as directed.

2In large mixing bowl, beat eggs; add oil and mix well.

3Add all other ingredients; mix well.

4Add rice last.

5Bake, uncovered, at 350° in a greased 9 x 13-inch loaf pan for 50 minutes.
