  • 2/3 cup rice
  • cooking spray
  • 1 teaspoon chicken bouillon powder
  • 1/2 green bell pepper diced
  • 1/2 cup frozen peas
  • 1 chile pepper poblano, grilled, peeled, and cut into strips
  • 2 scallions minced
  • salt and ground black pepper

Directions

    Boil 1 cup of water. Remove from heat and add the rice. Set aside for 3 minutes, drain, and wash until the water comes off clear.

    Spritz a pan with cooking spray and saute the rice until it changes in color. Add 1 1/2 cups water and the bouillon and stir. Lower the heat, cover the pan, and cook for 15 minutes, until the rice is cooked. Remove the rice from the heat and let cool.

    Defrost the peas. Mix with the rice, bell pepper, poblano, and scallions. Add salt and pepper and serve.
