- 12 tablespoon olive oil
- 12-1 cup diced onion
- 12 teaspoon cumin seed
- 1 cup white rice
- 1 teaspoon dried Mexican oregano
- 12 teaspoon salt (optional)
- 2 cups reduced-sodium fat-free chicken broth or 2 cups vegetable broth
- 4 ounces diced mild green chilies, rinsed and drained to remove sodium
- 3 green onions, thinly sliced
- 13 cup chopped fresh cilantro
- 13 cup chopped fresh parsley
Directions

1Saute onions and cumin seeds in oil in a large pot or ricer, add rice,oregano, salt, if desired, broth, and chilies,in large saucepan or ricer.

2Top with water to cover by an inch.

3Bring to a boil, uncovered, over high heat.

4Reduce heat to low; cover and simmer 20 minutes or until liquid is absorbed and rice is tender.

5Or close lid of ricer and cook.

6Fluff rice and stir in green onions, cilantro and parsley.
