Green Rice Salad

Ingredients
- 2 1/4 c. uncooked long grain rice
- 3 1/2 c. water
- 1 1/2 tsp. salt
- 5 Tbsp. white wine vinegar
- 3 Tbsp. mustard
- 2/3 c. vegetable oil
- 2 Tbsp. sugar
- 1/4 tsp. pepper
- 2 c. diced celery
- 1/2 c. sliced green onion
- 1/4 c. chopped fresh dill
- 2 Tbsp. chopped fresh mint
- 2 Tbsp. chopped fresh parsley
- 10 oz. frozen peas, thawed
Directions

1Bring rice, water and 1 teaspoon salt to a boil.

2Cover and reduce heat; simmer 20 minutes.

3Remove from heat and let stand 20 minutes.

4Beat together vinegar and mustard; beat in oil, then sugar, remaining 1/2 teaspoon salt and pepper, stirring until sugar dissolves.

5Add rice and toss until well coated with dressing.

6Add celery, green onion, dill, mint and parsley and toss.

7Add peas and toss again.

8Serve at room temperature.
