Green Rice Salad

Ingredients

  • 2 1/4 c. uncooked long grain rice
  • 3 1/2 c. water
  • 1 1/2 tsp. salt
  • 5 Tbsp. white wine vinegar
  • 3 Tbsp. mustard
  • 2/3 c. vegetable oil
  • 2 Tbsp. sugar
  • 1/4 tsp. pepper
  • 2 c. diced celery
  • 1/2 c. sliced green onion
  • 1/4 c. chopped fresh dill
  • 2 Tbsp. chopped fresh mint
  • 2 Tbsp. chopped fresh parsley
  • 10 oz. frozen peas, thawed

Directions

    Bring rice, water and 1 teaspoon salt to a boil.

    Cover and reduce heat; simmer 20 minutes.

    Remove from heat and let stand 20 minutes.

    Beat together vinegar and mustard; beat in oil, then sugar, remaining 1/2 teaspoon salt and pepper, stirring until sugar dissolves.

    Add rice and toss until well coated with dressing.

    Add celery, green onion, dill, mint and parsley and toss.

    Add peas and toss again.

    Serve at room temperature.
