Green Rice (Stove-Top Method)

- 1 tablespoon butter
- 12 cup green onion, chopped
- 12 cup green pepper, chopped
- 2 garlic cloves, minced
- 1 cup long grain rice
- 2 cups chicken broth
- 1 cup fresh mushrooms, sliced
- 14 cup fresh parsley, chopped fine
Directions

1Melt butter in saucepan; add green onions, green pepper and garlic; saute 2 minutes.

2Add rice to pan; cook and stir 2 more minutes so all rice is coated.

3Add chicken broth and sliced mushrooms.

4Bring to a boil.

5Stir once; reduce heat to very low and cover pan.

6Simmer 17 minutes, without looking.

7Remove from heat; stir in parsley.

8Cover and let stand 5 minutes before serving.
