Ingredients

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp mirin
  • 1 clove garlic, crushed
  • 1 tsp sugar
  • 1 slice (1/4-inch) ginger, grated
  • 2 tsp olive oil
  • 1/2 tsp sesame oil
  • 6 oz asparagus, woody ends snapped off
  • 4 oz snow peas
  • 1 small cucumber, halved lengthwise, seeded and thinly sliced
  • 1 None avocado, peeled, pitted and diced
  • 4 oz mixed salad greens

Directions

    Whisk soy sauce, vinegar, mirin, garlic, sugar, ginger and oils in a small bowl. Let stand for 15 mins.

    Meanwhile, boil, steam or microwave asparagus and snow peas separately until just tender, drain and refresh with cold water. Cut asparagus into chunks.

    Place asparagus, snow peas, cucumber, avocado and salad greens in a large bowl. Drizzle with dressing; toss gently to combine.
