- 1/2 cups Naturally Brewed Soy Sauce
- 1/2 cups Mirin
- 1/4 cups Sake
- 1/4 cups Bonito Flakes
- 8 ounces, weight Green Tea Somen Or Soba Noodles
- 1 Tablespoon Vegetable Oil
- 1/4 cups Sliced Green Onions
- 2 Tablespoons Toasted White Sesame Seeds
- 1 Tablespoon Yuzu Or Satsuma Zest
Directions

1Prepare sauce by coming all of the ingredients and bringing it to boil in a saucepan over medium-high heat.

2Remove from heat and let it cool to room temperature.

3Once cooled, strain into a clean container.

4Prepare noodles according to package directions.

5(Note: real noodles do not require the addition of salt).

6Rinse with cold water; drain.

7Coat noodles with vegetable or canola oil.

8Transfer noodles to a zaru (bamboo basket) or individual bowls/plates.

9Garnish with green onions, sesame seeds, and zest.
