- 4 eggs
- 1 c. oil
- 2 1/2 c. sugar
- 1 1/2 tsp. vanilla
- 3 c. flour
- 1 tsp. salt
- 3 tsp. cinnamon
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1 c. chopped walnuts
- 2 c. minced green tomatoes
- grated rind of 1 lemon or 1 1/2 tsp. lemon juice
Directions

1Grease and flour 2 loaf pans.

2Heat oven to 325°.

3Beat together eggs, oil, sugar, tomatoes, vanilla, lemon juice and rind.

4Mix dry ingredients with fork; add nuts and pour into pan. Bake 1 hour or until done.

5Make during summer months and freeze some for winter.
