Green Tomato Chutney

  • 5 lb. green tomatoes
  • 1/2 lb. sliced onions
  • 1 lb. dark brown sugar
  • 1 Tbsp. ground cinnamon
  • 2 tsp. peppercorns
  • 1 Tbsp. allspice
  • 1 qt. vinegar
  • 1/4 tsp. cayenne pepper
  • 1 1/2 c. seedless raisins

Directions

    Slice tomatoes thinly and place in bowl with salt between layers.

    Leave overnight.

    Next day, rinse, drain and put in large pot with all remaining ingredients.

    Cook slowly, uncovered, until tomatoes are tender and vinegar is nearly absorbed.

    This will take close to 5 hours.

    Makes anywhere from 2 1/2 to 4 pints.
