Ingredients
- 6 medium green tomatoes (1 3/4 lb.)
- 1 c. sugar
- 3 Tbsp. unbleached flour
- 1 tsp. ground cinnamon
- 1 tsp. grated lemon peel
- 1/2 tsp. ground nutmeg
- 1/2 tsp. salt
- 2 Tbsp. butter or margarine
- pastry for 2 crust 9-inch pie
- sugar
Directions

1Dip tomatoes in boiling water for 20 to 30 seconds.

2Remove core and peel.

3Cut in 1/4-inch slices.

4Combine tomatoes and 1/4 cup water.

5Bring to boil.

6Reduce heat and simmer, covered, for 5 minutes.

7With slotted spoon, remove tomato slices.

8Mix 1 cup sugar, flour, cinnamon, peel, nutmeg and salt.

9Add to liquid in saucepan.

10Cook and stir just until boiling.

11Remove from heat and add butter.

12Gently stir in tomato slices.

13Cool 10 minutes.
