Ingredients

  • 2 Tbsp. butter
  • 1/4 c. chopped celery leaves
  • 1 Tbsp. flour
  • 2 c. cooked greens, drained and chopped (reserve juice)
  • 1 egg, well beaten
  • 1 1/2 c. cooked and cooled rice
  • 1 tsp. salt
  • 1/4 tsp. celery seed
  • 2 slices bacon

Directions

    Preheat oven to 400°.

    Fry celery leaves in butter over low heat until wilted.

    Sprinkle with flour and blend well.

    Add greens, cooking greens juice and beaten egg.

    Stir over low heat until warm.

    Pour into mixing bowl with rice, salt and celery seed; mix well.

    Pour into greased 9 x 5-inch loaf pan and place bacon strips on top.

    Bake 30 minutes or until firm and lightly browned.

    Unmold and serve hot.
