Ingredients
- 2 Tbsp. butter
- 1/4 c. chopped celery leaves
- 1 Tbsp. flour
- 2 c. cooked greens, drained and chopped (reserve juice)
- 1 egg, well beaten
- 1 1/2 c. cooked and cooled rice
- 1 tsp. salt
- 1/4 tsp. celery seed
- 2 slices bacon
Directions

1Preheat oven to 400°.

2Fry celery leaves in butter over low heat until wilted.

3Sprinkle with flour and blend well.

4Add greens, cooking greens juice and beaten egg.

5Stir over low heat until warm.

6Pour into mixing bowl with rice, salt and celery seed; mix well.

7Pour into greased 9 x 5-inch loaf pan and place bacon strips on top.

8Bake 30 minutes or until firm and lightly browned.

9Unmold and serve hot.
