  • 100g sultanas
  • 75ml dark rum
  • 175g plain flour
  • 2tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 125g melted butter
  • 150g light brown sugar
  • 2 large eggs
  • 3 large or 4 small very ripe bananas
  • 60g walnuts (optional)
  • 1tsp vanilla extract
  • 2 inches of cinnamon stick - ground up
  • 2 cloves - ground up
  • 1/2 a nutmeg - ground up
