- 1 chicken
- salt to taste
- 1 c. self-rising flour
- 1 c. self-rising meal
- vegetable oil
Directions

1Skin chicken, then add salt.

2Mix flour and meal; sift together.

3Roll chicken in mixture.

4Fill frying pan 1/3 full of vegetable oil.

5Heat oil until hot.

6Put chicken in oil.

7Cover and brown.

8Turn chicken until all sides are brown.

9Turn heat down to a slow simmer for about 25 minutes.

10Keep turning chicken; this lets chicken get tender.
