Griddled Pineapple

  • 1 pineapple, peeled, cored and sliced thickly, lengthwise
  • 1/2 tsp vegetable oil or cooking spray
  • 1 tbsp clear honey per serving
  • 1 plain or coconut Greek yogurt or ice cream, to serve

Directions

    Heat a cast iron griddle pan on a medium high heat.

    Brush with oil, or spray on cooking spray
  3. 3
    Place the pineapple slices in the griddle, and griddle on all sides for up to a minute, getting char lines on them.

    Put the pineapple in serving dishes, pour 1 tbsp honey over each serving.

    Finish off with Greek yogurt or ice cream.
